    • 4 pounds corned beef brisket
    • 8 cups water
    • 2 bay leaves

    • 8 carrots, peeled and cut into chunks
    • 8 potatoes, peeled and cut into chunks
  • Instructions:
    1. In a large pot, combine the corned beef, water, bay leaves, and black peppercorns.
    2. Bring to a boil, then reduce heat and simmer for 3 hours or until the meat is tender.
    3. Add the cabbage, carrots, and potatoes, and simmer for an additional 30 minutes or until the vegetables are tender.
    4. Remove the meat and vegetables from the pot and serve hot.

Bailey’s Irish Cream Cheesecake

  • Ingredients:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup butter, melted
    • 3 (8-ounce) packages cream cheese, softened
    • 1 1/4 cups sugar
    • 1/4 cup Bailey’s Irish Cream
    • 4 eggs
    • 1 teaspoon vanilla extract
