  5. Brush the seasoned oil mixture over the potatoes making sure to get in between the slices.
  6. Bake the potatoes for 40-45 minutes or until they are cooked through and crispy on the outside.
  7. Sprinkle shredded cheddar cheese over the top of the potatoes and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  8. Garnish with chopped parsley and serve hot.
