My Favorite Recipes
Here are a few of my favorite recipes that are easy to make and always crowd-pleasers:
1. Spaghetti Carbonara
- Cook spaghetti according to package instructions until al dente.
- In a pan, fry chopped bacon until crispy.
- In a bowl, whisk together 2 egg yolks and 1/4 cup grated parmesan cheese.
- Drain the spaghetti and add it to the pan with the bacon, tossing to coat in the bacon fat.
- Remove from heat and add the egg yolk mixture, stirring quickly to avoid scrambling the eggs.
- Season with salt and pepper and serve with extra parmesan cheese.
2. Chickpea Curry
- In a pot, sauté 1 chopped onion and 2 cloves of minced garlic in oil until softened.
- Add 1 can of drained chickpeas and 1 can of diced tomatoes to the pot.
- Stir in 1 tablespoon of curry powder and 1 teaspoon of cumin.
- Simmer for 10-15 minutes until the sauce has thickened.
- Serve over rice with a dollop of plain yogurt and chopped cilantro.
3. Chocolate Chip Cookies
- Cream together 1/2 cup softened butter and 1/2 cup granulated sugar.
- Add 1 beaten egg and 1 teaspoon of vanilla extract to the mixture.
- In a separate bowl, combine 1 cup of flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
- Add the dry ingredients to the wet mixture and stir until combined.
- Stir in 1 cup of chocolate chips.
- Spoon tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake at 350°F for 10-12 minutes until golden brown.
