Introduction

There’s nothing quite like a juicy burger with a crunchy dill pickle on the side. But have you ever considered making your own pickles? Canning your own pickles is not only a fun and rewarding activity, but it also allows you to control the ingredients and customize the flavors to your liking. In this article, I’ll be sharing my Hamburger Dill Pickle Canning Recipe, which has been a hit in my family for generations.

Curiosities and Facts

  • Dill pickles have been a popular condiment in the United States since the 19th century.
  • The word pickle comes from the Dutch word pekel which means brine.
  • In 2019, Americans consumed over 12 billion pickles, with dill pickles being the most popular variety.
  • Canning your own pickles can save you money in the long run, as store-bought pickles can be expensive.

Ingredients

  • 4 pounds pickling cucumbers
  • 4 cups water
  • 4 cups white vinegar
  • 1/2 cup pickling salt
  • 16 garlic cloves, peeled
  • 8 dill heads, or 8 teaspoons dill seeds
  • 4 teaspoons mustard seeds
  • 4 teaspoons black peppercorns

Instructions

  1. Wash and dry the cucumbers. Cut off the ends and slice them into spears or chips.
  2. In a large pot, combine the water, vinegar, and pickling salt. Bring to a boil.
  3. Meanwhile, place 2 garlic cloves, 1 dill head (or 1 teaspoon dill seeds), 1 teaspoon mustard seeds, and 1 teaspoon black peppercorns in each hot, sterilized pint jar.
  4. Pack the cucumber spears or chips tightly into the jars, leaving about 1/2 inch of headspace at the top.
  5. Pour the hot brine over the cucumbers, leaving 1/2 inch of headspace at the top.
  6. Tap the jars gently on a towel-lined surface to remove any air bubbles.
  7. Wipe the rims of the jars with a clean, damp cloth. Place the lids and rings on the jars, tightening the rings just until they are snug.
  8. Process the jars in a boiling water bath for 10 minutes.
  9. Remove the jars from the water bath and let them cool on a towel-lined surface for 12-24 hours.
  10. Check the seals on the jars. If a jar did not seal properly, store it in the refrigerator and consume within a few weeks.
  11. Store the sealed jars in a cool, dark place for at least 2 weeks before opening to allow the flavors to develop.

FAQs

Can I use regular cucumbers instead of pickling cucumbers?

While you can use regular cucumbers for pickling, they may not hold up as well and could become mushy. Pickling cucumbers are specifically bred for pickling and have a firmer texture.

Can I adjust the spices to my liking?

Absolutely! This recipe is just a starting point. Feel free to experiment with different spices and herbs to create a flavor profile that you love.

How long do the pickles need to sit before they can be eaten?

It’s best to wait at least 2 weeks before opening the jars to allow the flavors to fully develop. However, if you can’t wait that long, you can certainly try them sooner.
