  • 2 stalks celery, chopped
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste

Here’s how to make it:

  • Season beef with salt and pepper.
  • Heat oil in pressure cooker over medium heat. Add beef and cook until browned, about 3-4 minutes per side. Remove beef and set aside.

  • 1 cup chocolate graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 2 eggs, room temperature
  • 1 tsp vanilla extract

Here’s how to make it:

  • In a small bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 7-inch springform pan.
  • In a large bowl, beat cream cheese until smooth.
  • Add sugar and cocoa powder and beat until well combined.
  • Add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract.
  • Pour mixture into prepared pan and cover tightly with foil.
  • Place trivet in pressure cooker and add 1 cup of water.
  • Carefully lower cheesecake onto trivet.
  • Lock lid in place and bring to high pressure. Cook for 35 minutes.
  • Remove from heat and let pressure release naturally for 10 minutes.
  • Remove lid and carefully remove cheesecake from pressure cooker.
  • Let cool to room temperature, then refrigerate for at least 4 hours before serving.
